Growing and Making

Production Notes
From Piccadilly, Lobethal and our Lenswood Vineyard, at 455–500 metres elevation. Undulating with east and west facing aspects, the soils are brown loams over clay with broken shale on the ridges. The vineyard was planted in 1999. Hand picked and whole bunch pressed. Fermented and matured on lees in French oak barriques and puncheons.

Winemaker Notes
The Shaw + Smith winery was built in 2000, providing the ability to whole-bunch press chilled grapes for the first time, and underpinning the evolution of style from that first M3 Chardonnay vintage in 2000 through to the present day. The most significant event since then came in 2012 with the purchase of the Lenswood vineyard. Chardonnay was originally planted in Lenswood for sparkling wine production but it now fulfils its potential for fine still wine, with finesse, flavour, and great natural acidity.

Pristine and perfectly ripe fruit, a mix of stone fruit and citrus folded into creamy lees, and ginger notes with a liberal seasoning of integrated French oak spice. A fuller-bodied palate, texture and complexity with ultra-refreshing acidity. No point waiting.

The wine is delicate, light to medium-bodied and not especially concentrated, but has attractive flavour and style, finishing clean and dry with a pleasingly savoury aftertaste. Since the first from the 2000 vintage, the Shaw + Smith M3 chardonnays have been invariable among the nation’s best. This 2016 is lime green-tinted straw and has aromas of apricot and macadamia nuts. The front palate has elegant white nectarine flavour and drag-on fruit, lemon curd, brioche and cashew oak meld on the middle palate. Slatey acid features at the finish.
