One of Martin Shaw's favourite festive traditions is the annual staff Champagne tasting.
Held on the afternoon before the Shaw + Smith Christmas party, it's a wonderful opportunity for staff to relax and explore a wine-style we don't produce.
"Over the years the theme has varied, but educating staff to be more wine knowledgeable is always at the forefront."
Martin counts Louis Roederer and Charles Heidseick among his non-vintage favourites. For special occassions, Taittinger Comtes de Champagne, Krug and Dom Perignon.

When it comes to glassware, Martin prefers a classic glass over a flute, as he believes they better display Champagne's complex characteristics.
"That said, if Dom was on offer and a Vegemite glass was the only option, I would happily partake."
